
How to Cook Perfect Steak
Ingredients
Beef sirloin steak (or other steak of choice)
Dry rub of your choice
1 tbsp good quality cooking oil
Method
This method works well on both expensive and cheaper cuts of meat. However, it is very important that you only use cuts of meat from 3 to 4cm thick. Also, trim off any silver skin and gristle.
Set up BBQ for indirect cooking with a water pan over the middle two burners. Preheat BBQ and turn off the middle burners, leaving the outer two on high.
Sear meat quickly over the outer burners. To get a neat grilled cross pattern, we recommend rotating the meat once 90° on the grilling bars per side. Ensure you do not sear for more than 2 minutes per side.
Transfer the meat to the grilling bars over the water pan. Pre-oil your Roasteasy by swirling it in a bowl or jar with the good quality cooking oil. Cover the steak with your pre-oiled Roasteasy and cook with lid down for another 10 minutes before checking internal temperature with a quick read thermometer. Continue cooking until your desired temperature is reached (it takes approx. 20 minutes for a 4cm steak to reach 62° C). Transfer cooked steak to a plate and allow to rest, covered with the Roasteasy, for 5 to 10 minutes.
