
Perfect Pork Fillet
Ingredients
2kg pork fillet
Dry Rub:
1 tsp paprika
1 tsp brown sugar
1 tsp kosher salt
1/2 tsp chilli powder
1/2 tsp black pepper
1/4 tsp ground allspice
2 tbsp good quality cooking oil
Method
Trim pork of excess fat and silver skin. Mix together ingredients for the dry rub in a small bowl. Lightly brush the meat with 1 tbsp of the olive oil and pat over the dry rub.
Preheat BBQ to 250°C with all burners on. Pre-oil Roasteasy by swirling in a bowl with the good quality cooking oil. Wrap fillet in pre-oiled Roasteasy.
Turn off middle burners and place meat on grille plates over a water pan*. Adjust outer burners to achieve an eventual cooking temperature of around 180°C. Cook for 1 to 2 hours until you reach an internal temperature of at least 65°C.
Leave to rest, while still covered with the Roasteasy, for 10 minutes before serving.
