Roast Turkey with Herby Bacon Stuffing

Serves: 12

Ingredients

3 kg turkey

30g butter, melted

2 tbsps fresh thyme

2 tbsps sea salt

Herby Bacon Stuffing

50g butter

2 bacon slices

1/2 brown onion

2 sticks celery

1 tbsp fresh or dried sage

2 tsp fresh or dried thyme

2 cups breadcrumbs

1 egg

Method

Rinse the turkey inside and out with water and pat dry.

To make the herby bacon stuffing, finely chop the bacon and add to a frying pan with the butter – cook until browned. Chop the onion and celery and add to the frying pan with the bacon. Cook until soft – around 5 minutes. Lightly beat the egg and combine with the bacon mixture, breadcrumbs and herbs. Spoon the stuffing into the large cavity of the turkey. Tie the legs of the turkey together with kitchen string and securing the stuffing with toothpicks.

Place the turkey in a large baking dish. Brush all over with the melted butter and sprinkle with the thyme and salt. Pre-oil your Roasteasy by swirling it in a bowl with the good quality cooking oil and drape it over the top. Roast for 3 hours, basting regularly with the pan juices through the Roasteasy, until it reaches a temperature of 90°C. Remove turkey from dish and allow to rest for 20 minutes while still covered with the Roasteasy.
