Lemon + Thyme Spatchcock Chicken

Ingredients

  • Whole chicken
  • 3 lemons
  • Clove of garlic
  • 1 tbsp thyme
  • Olive oil
  • Salt and pepper

Method

Pre-heat the oven to 180-190 degrees C.

Quarter the lemons, pull the garlic into separate cloves and place in the bottom of a roasting tin with the thyme.

Cut out the backbone of the chicken, open it out and flatten. Place on top of the lemon and garlic. Drizzle with a little olive oil and season with salt and pepper.

Place the Roasteasy over the chicken and roast for about 50mins – 75mins depending on the size of your chicken.

Baste every 15mins, leaving the Roasteasy on while doing so.
